Carol Owen's Rhubarb Pie
If you love Carol's Rhubarb Pie from Saturday's Farm Fresh Market, here's a recipe to share.
Preheat Oven to 400 degrees
1 - 9 inch pie crust
Filling:
3 cups chopped rhubarb
1 cup sugar
1/4 tapioca
A few drops of red food coloring (optional)
Crumb Topping:
1 cup flour
1/2 sugar
1/4 cup soften butter
Stir together filling ingredients and pour into pie shell. Place in preheated 400 degree oven for 10 minutes. Reduce heat to 350 degrees and bake for 35 minutes or until rhubarb is bubbling.
While pie is baking, rub the crumb mixture together. Sprinkle crumbs on pie and bake for about 10 minutes or until golden brown.
